Preparation

Just a quick post. It's late & I'm far from sleep due to preparations for this week's lunches.

I've made a simple tuna (canned) & tomato 'sauce' with Italian herbs, Mediterranean couscous with corn kernels, chopped fresh cucumber & red pepper & yellow pepper, toasted some pumpkin seeds... Will have a bit of each, along with some salad, feta, hummus, & cucumber/mint yoghurt dip. 

Mmmm healthier lunches here I come. 

Today was a success (day one down), though couldn't resist a cheeky Sav with my dinner...
